* 1 cup (2 sticks) unsalted butter, softened
* 2/3 cup creamy peanut butter
* 2/3 cup light brown sugar, packed
* 1 1/2 teaspoons vanilla
* 2 1/2 cups all-purpose flour
* 1/4 cup cornstarch
* 3/4 cup very finely chopped roasted or honey-roasted peanuts
Preparation:
Heat oven to 350°.
Combine the butter, peanut butter, and brown sugar in a large mixing bowl; beat with electric mixer until smooth and creamy. Beat in vanilla. Slowly beat or stir in the flour and cornstarch until mixture holds together. Blend in the very finely chopped peanuts.
Roll out on a lightly floured board to about 1/4-inch thickness and cut with cookie cutters and place on an ungreased baking sheet or baking sheet lined with a silicone mat. Or, shape the dough into small balls and place on a cookie sheet, dip the flat bottom of a glass in granulated sugar, and flatten gently to about 1/4 inch thickness.
Bake for 20 to 25 minutes, or until cookies are set and bottoms just begin to brown. Cool on the pan for 5 minutes then remove to a wire rack to cool completely. If desired, melt 1 cup chocolate chips with 2 teaspoons of shortening and drizzle over the cookies.
Makes about four dozen cookies.

i keep finding good christmas recipes!
Ingredients:
* 2 1/2 cups pecan halves
* 2 teaspoons vegetable oil
* 1 cup granulated sugar
* 1 teaspoon cinnamon
* 3/4 teaspoon salt
* 1/4 cup water
* 1 teaspoon vanilla extract
Preparation:
Put pecans and oil in a flat baking pan; stir until pecans are coated. Roast in 300° oven 20 to 25 minutes, stirring frequently. Cool.
Combine sugar, cinnamon, salt, and water in a saucepan; cook, stirring, over medium heat until sugar is dissolved. Boil to 236° of a candy thermometer, or to soft ball stage.* Remove from heat; blend in vanilla. Add pecans and stir until mixture is creamy. Turn out onto waxed paper and use a fork to separate pecans.
*To Test for Soft Ball Stage
A small amount of syrup dropped into chilled water forms a ball, but is soft enough to flatten when picked up with fingers (234° to 240°).

I loved this stuff my mom used to make but I can't rememeber what it is. They were chocolatey balls with some sort of nuts in them and i think maybe pretzels... can anyone help?
Maybe they were these?

Classic eggnog! although strangely enough I've never had it... well anyway I might have to try it because it seems like it'd be good. Here's a recipe I found though:
Traditional Eggnog Recipe
12 eggs, separated
6 cups milk
2 cups heavy/ thickened cream
2 cups bourbon
1+ ½ cups sugar
¾ cup brandy
2 teaspoons ground nutmeg
In a large bowl and using a mixer, beat the egg yolks together with the sugar for approx 10 minutes (you want the mixture to be firm and the colour of butter).
Very slowly, add in the bourbon and brandy - just a little at a time.
When bourbon and brandy have been added, allow the mixture to cool in the fridge (for up to 6 hours, depending on how long before your party you're making the eggnog).
30 minutes before your guests arrive, stir the milk into the chilled yolk mixture.
Stir in 1+ ½ teaspoons ground nutmeg.
In a separate bowl, beat the cream with a mixer on high speed until the cream forms stiff peaks.
In yet another bowl, beat the egg whites until stiff peaks form.
Gently fold the egg white mixture into the egg yolk mixture.
Gently fold the cream into the egg mixture.
After ladling into cups, garnish with the remainder of the ground nutmeg.
Serves: 8.

Diamonds are better than tradition so if you think that here's a diamond eggnog recipe!
Diamond Eggnog Recipe
4 + ½ cups milk
4 eggs, separated
1 (125g/ 5 ounce) can sweetened condensed milk
1 tablespoon sugar
1 teaspoon vanilla essence
30ml (or approx 1 oz) rum
¼ teaspoon nutmeg or cinnamon, ground
Using a mixer, beat the egg yolks in a large bowl for 5 - 10 minutes; they need to be thick and resemble the colour of butter.
A little bit at a time, add in the milk, condensed milk, sugar and vanilla essence.
In a separate bowl, beat the egg whites to stiff peaks.
Slowly fold the egg whites into the rest of the mixture.
Add rum.
Stir gently.
Serve in cups and garnish with ground nutmeg or cinnamon.
Serves: 6.

125g butter
1 lemon, halved
1 pack fresh rosemary
salt and freshly ground pepper

2. Place the butter, lemon and whole herbs in the cavity. Cook the bird breast-side down for 15 minutes, then turn the oven down to 180C/350F/gas mark 4. Cook for 3 1/2 hours, turning bird the right side up after 2 hours.
3. Test the turkey with a skewer in the leg joint. If blood comes out, give it another 20 minutes. If clear juices run out, it's cooked. Remove from the pan, wrap in foil and rest for 20 minutes while you make your gravy.
Enjoy your Christmas Dinner!
